Turnkey Business Launch
We developed the original concept: SOMI — a combination of an evening bar and a kitchen with a Pan-Asian influence, targeting young Milanese residents and tourists.
We prepared a business plan, financial model, unit economics, and calculated the return on investment.
We registered the legal entity, opened bank accounts, and obtained all necessary permits for catering operations.
We created the organizational structure and instructions for the team (manager, kitchen, waiters, bar staff).
Premises Selection and Scaling
Initially, we selected a location in a bustling, high-traffic area.
Following a successful launch, we acquired the neighboring restaurant, merged the dining areas, and more than doubled the seating capacity.
We oversaw the re-planning and coordination of all necessary permits and documentation.
Design
We created a unique interior: minimalism with accents of wood, neon, live plants, and an open kitchen.
We selected the furniture, bar counter, lighting, and established the visual style of the dining area.
We refined the seating layout after expansion, considering waiter logistics and optimal spots for photos/content.
Web Development and Booking
We developed a landing page featuring the menu, gallery, map, reviews, and a booking form.
We integrated with Google Maps and table management systems.
We connected WhatsApp/Telegram bots for quick bookings and inquiries.
Targeted Advertising and Promotion
We configured advertising campaigns on Meta and Google: based on interests (food, parties, wine) and geolocation (within a 5 km radius).
We ran campaigns for the soft opening and promotional activities as the business scaled.
We conducted tests and scaled the most effective combinations.
SMM and Visual Content Management
We created the visual style for Instagram: emphasizing the atmosphere of food, bar culture, and community.
We filmed Reels, content from guest tables, and event announcements.
We established a tone of voice: lively, light, evening-themed, with humor and visual triggers.
Financial Modeling
We developed a model to inform the scaling decision.
We conducted an assessment of potential revenue growth and cost structure when combining locations.
We calculated the payback period for the expansion and the improvement in unit economics.
Result
SOMI is a restaurant that transformed from a launch with limited seating to a large-scale space with 300+ seats and a strong brand.
